A while back I posted a recipe for a Raw Apple Pie that i learned to make while in school in Albuquerque. I wanted to repost it now for those of you who have heard me talk about it. It is so very easy to make and better yet, its healthy too!
To begin you will need…
- 4 Apples (I like Honey Crisp)
- 1 TBSP of Cinaminon
- 1 Cup of Nuts (this can be Cashews, Walnuts or Almonds)
- 1 Cup of Raisins
- 2 Cips of Dates (pitted)
Begin by soaking the Raisins and 1 Cup of the pitted Dates in water – set aside. In a Food Processor place your Nuts and the 2nd cup of pitted Dates – blend well. This is come out a little sticky. Spread this out into a 9-inch pie pan being sure to cover the full bottom and moving up the sides of the dish – this is your crust. Place the pie pan in the freezer. Peel two (2) of the apples and slice into thin slivers and place in a bowl. Take the other 2 apples and peel and core these then place them in the food processor. Add the raisons and dates that have been soaking in the water. Add a little of this water into the food processor with the fruit. bleed well – adding more water if necessary. you want this to have the consistancy of apple sauce. Now mix this sauce with the sliced apples and mix together. Pull the pie pan from the frezzor and top the pie crust with the blended fruit.
Eat right away or cover and keep for later – this should last for up to four days in the refrigerator.
